Gravy Beef Casserole



  1. Gravy Beef
  2. Carrots, diced
  3. Onion, sliced
  4. Garlic
  5. Eggplant, chopped
  6. Potatoes, chopped



  1. Combine all ingredients in a pressure cooker. Cook for 30 minutes.
  2. In a saucepan boil water with a pinch of salt.
  3. Add chopped potatoes and boil until soft.
  4. Drain water from the saucepan and add milk and butter and begin to mash the potatoes. Add salt to taste. Mash until creamy consistency.
  5. Plate potatoes and serve with the beef casserole.
  6. Enjoy!
