Savoury Muffins

? Ingredients:

  1. 1 ½ cups self raising flour
  2. ⅓  cup of plain yogurt
  3. ¼ cup milk
  4. ¼ extra virgin olive oil
  5. 1 large egg
  6. 6 strips of angus beef rashers cooked and chopped into 1cm pieces
  7. Halloumi cheese
  8. 1 Red onion
  9. Baby spinach
  10. Pesto (rocket, pine nuts, olive oil, parmesan cheese, salt to taste)


? Method:

  1. Slice angus beef rashers into little pieces and fry in a fry pan until crispy.
  2. In a mixing bowl, combine all wet and dry ingredients and mix until well combined.
  3. In a muffin tray, spoon mix into muffin patties.
  4. Add angus beef rashers on top to decorate.
  5. Cook in the oven for roughly 15 minutes or until cooked throughout (test with a skewer).
  6. Serve and enjoy.
