Ingredients
Lamb shoulder from Abu Ahmad Butchery
2 cups of basmati rice
¼ cup cooking oil
8 whole cloves
4 black cardamom pods
4 cinnamon sticks
4 large onions sliced thin
1 tbsp garlic paste
1 tbsp ginger paste
¼ cup coriander leaves
3 tbsp mint leaves
3 tomatoes chopped
2 tsp ground chilli powder
2 tbsp plain yogurt
2 tbsp lemon juice
1 tsp of salt
1 cup carrots grated
1 cup green beans
4 cups of water

Method
1 - In a pressure cooker add your ¼ cup of cooking oil and all of the dry spices.

2 - Add the garlic, ginger, coriander and mint to the spices and oil in the pressure cooker.

3 - Add yogurt and lemon juice, mix together until all is combined

4 - Add the lamb shoulder to the pressure cooker and season with salt and pepper

5 - Add 4 cups of water to the pressure cooker and cook the lamb for 20 minutes

6 - Take the lamb shoulder out of the pressure cooker (leave the liquid in the pressure cooker) and place lamb on a baking tray to transfer into the oven set to 200 degrees. Oven bake for approx 20 minutes.

7 - Add rice, green beans and carrots to the liquid in the pressure cooker and stir until combined. Cook for 9 minutes.

For Iftar, this week how about "Kafta Bil Seneya"

Ingredients
1 kg Fettayleh Premium Kafta
4 potatoes, peeled and sliced
3 tomatoes, sliced
2 onions, peeled and sliced
1 eggplant, sliced
1 cup passata sauce
1 tsp lebanese 7 spice mix
1 tsp ground cumin
1 tsp ground coriander
½ cup of water
2 tbsp Pomegranate molasses
Salt and pepper to taste

Method
1- Take Kafta and shape into singular circular patties and place into a baking tray.

2 - In a fry pan on a high heat, cook sliced eggplant and potato until they are half cooked (they will completely cook in the oven).

3 - Starting with you kafta as the base, start to stack potato slice, followed by eggplant slice, tomato slice and onion and place on a baking tray.

4 - To make the sauce mix passata, 7 spice mix, ground cumin, ground coriander, pomegranate molasses’ and half a cup of water until thoroughly combined.

5 - Drizzle the sauce over the kafta stacks so that each stack is evenly covered with sauce.

6 - Place in the oven and cook for 25 mins at 180 degrees.

7 - Serve with salt and pepper to taste – enjoy!

The ultimate brekky (Suhur) roll for this weekend

The ultimate brekky (Suhur) roll for this weekend using Fettayleh's American Style Skinless Hotdog.

So simple yet so delicious 👌

Ingredients:
Fettayleh Skinless hotdogs
Eggs
Panini rolls
Baby spinach
Halloumi Cheese
Pesto (jar or fresh)
Sriracha ketchup
Salt to taste

Method:
1 - Slice hotdog in half lengthways, place in the grill and cook for approx

2 - In a fry pan, heat the pan to a medium heat and place the baby spinach in the pan with a pinch of salt. Cook until wilted. Remove and set aside once done.

3 - Toast panini rolls in the oven until golden.

4 - Slice and pat dry the halloumi with a piece of paper towel.

5 - Take halloumi and grill until golden.

6 - In the fry pan, fry the eggs, sunny side up until whites are fully cooked.

7 - Take the panini roll and spread pesto on the bread, then add spinach, add the sliced hotdogs, a slice of halloumi and finally the fried egg.

8 - Drizzle sriracha and salt to taste, then serve.
